ubiquity (the graphical installer) and debian-installer (the text mode
installer), both support GPT (else secure-boot installs would not work,
where GPT is a hard requirement), not sure about gparted, i haven't
used it in years ... 

on the commandline you want gdisk or sgdisk ... (the latter for
scripting, the former for interactive use)
