During the Ubuntu install process, you would have been asked for a
username and password. Log in as that username, with that password.

Then, if you need to execute something as root, use sudo. E.g.,:

   sudo some_command

sudo will prompt you for YOUR password (not root's). If you put in the
right password, sudo will run some_command as root.

If you really want to be able to log in as root, which is generally
regarded as a bad idea, do this:

   sudo bash
   su -
   passwd

... and enter the desired root password (the "su -" is optional, but a
good idea).

With a root password you will be able to log in as root, and also use su
directly.
