This depends entirely on where her address book and other folders live
now. Is she using gmail and Google calendar and contacts? In that case
I fully expect that Thunderbird will be able to see all her folders,
contacts, and calendar since it's not stored on your system, it's kept
on Google's systems.
If she's using POP to retrieve her email, local Evolution calendars and
local Evolution contacts then most likely Thunderbird won't be able to
read that.
However, I've never used Thunderbird so I don't know. Certainly it
won't hurt to start it up and see what happens...
BTW, if the problem your wife is having is related to errors during
filtering and spam checking, that bug is fixed in the current release of
Evolution, which was made back in April. Unfortunately I'm not sure
when that version will be available in Ubuntu... definitely in Ubuntu
15.10 (October), but that's a long ways off.
