Ubuntu 12.04 changed itself to xubuntu and stopped working

There is an Ubuntu spin already set up with MATE, you know. You were
given a link to the homepage earlier in this thread. It might be
worthwhile to download an image so you have it available in the future.

You might also want to look into using apt-clone. It can be used to
take a "snapshot" of the repositories that are in use and which packages
have been installed, and then re-create that status later on another
installation.

Try running "sudo apt-get -f dist-upgrade".

Do you still have access to all your installations from the GRUB menu?
You could also run "sudo update-grub" from within Ubuntu, that should
overwrite GRUB. Make sure that it is set up correctly before doing so,
however.
