I don't know if you can connect the headphones output to the microphone jack on
the computer but I would expect it will work with some electronics between the
two.  I have a record player that has a USB connection so I can capture the
audio on the computer, there are cassette players with the same options on
Amazon.

Once you get the output of the cassette connected to the computer you can
capture the audio and edit it with the Audacity program.
