Ubuntu on Mac Mini questions: manually booting without grub, and preserving GPT partition

For the sake of anyone who stumbles upon this in the future, I solved this.
The problem was that I was using the `+mac` installer ISOs. Using the
"normal" server installer gave me an EFI installation, albeit still
unbootable. The trick to booting into it manually is documented on Ask
Ubuntu[1]. I'll follow this up with a procedure for making it actually
bootable, all the time.
