An access point (something like your WLAN router) is the point where all 
the other stations connect to. Usually it would be configured as a 
bridge to enable the stations to "talk" to each other as well. Then the 
data from one station to another would be transferred twice, i.e. first 
to the AP and then from the AP to the other station. The stations can't 
talk to each other directly, only via the access point.

With ad-hoc mode the data would be sent from one station directly to the 
other station, i.e. the throughput would be doubled. And it works 
without the central station which is configured as access point.

If you want to transfer data between a server and several clients, it 
would be useful to configure the server as an AP, but if you want to 
transfer data between all your machines, you might get a higher overall 
throughput with ad-hoc connections.
