Did you backup the hidden folders (.local etc)?

Did you restore the hidden folders?

For future reference, if you install ubuntu over the top of an
existing ubuntu installation and go through the "something else"
option in the installer, then select the existing partition to install
into, but do /not/ select Format for that partition, then Ubuntu will
be installed over the existing version but will leave /home alone
(even if it is not a separate partition).

You have not said which version you are using, but I believe that
evolution no longer uses .evolution, but .local/share/evolution and
.config/evolution.
