Ubuntu Box for my kid's School Library

Hi all,

I was finally able to convince the headmaster at my kid's school to try
Linux.

I want to put together an Ubuntu based Kiosk Mode box to serve as an
Internet access machine / educational games (GCompris, Pingus, etc.).

I've installed a normal Ubuntu 12.04 on the intended computer and created
the firs user to be used by the Librarian (a.k.a. Administrator). I created
another user for the kids to use, and set it as a Standard user to Auto
Login.

Now the question:

How do I lock down that specific user? Here is what I want to achieve:

Disable the 'Cog' menu
Disable the Users menu (Switch User)
Allow access to white listed apps only from the Unity Dash

You get the idea - basically, I only want them to have access to a few
apps, the time, weather (in the notification bar) and nothing else.

I also need a hidden way to switch to the administrative user (ALT-CTRL-F1
to restart the lightdm service will just automatically login the same
standard user again...)

I'd really appreciate pointers to resources about debconf CLI arguments and
settings...
Kind of "power tips for Ubuntu configuration guides"....
