(no need for sudo)
i would open two terminals ... and run:
tail -f /var/log/kern.log
in one (kern.log is the equivalent of dmesg) ...
tail -f /var/log/syslog
in the other ...
(to stop the tail command, use ctrl-c)
then use the system until the slowness occurs and see if either of them
prints anything interesting
