That's my point. Ubiquity, debian-installer, and anaconda all default
to a single partition with the option to customize the layout. So the
OP's request to have "/var" split off by default is an unusual one.
To the OP: This may only be available in expert mode. There's a preset
option to partition into separate "/" "/boot" "/home" "/usr" "/var".
