It's unmounted and it STILL spins up every 5 minutes? And it didn't do this
in the past?

Has it had a firmware patch?

I would imagine that if the disk definitely is unmounted and it's still
winding up it's something on this disk itself which is doing this. Test by
pulling the USB cable from the disk - if it still lights up, it's the
firmware so your attention should be directed to Seagate.
