Ubuntu 12.04 LTS removing unity and installing GNOME

Does any other desktop environment use GTK? I understand this is not a
GNOME thing, and I am not challenging that (just wanted to make sure and
clear things up first), but I was just wondering. GTK seems to be a very
stable toolkit.

GTK is not the same as Gnome. Gnome is just one of many pieces of
software that use GTK.
