You can adjust the launcher timing in the Compiz Settings Manager. You
can even leave the launcher visible and also change which edge it
appears on.
I too was frustrated at first with Unity and used Gnome 3 for a while
which is also quite usable. Unity is just different and fortunately you
can change which graphical window manager you want to use to suit your
own preferences.
