Quite a nice background you have there, Jesse.

For now you do not have to use Unity and you could fall back to Gnome
and keep the desktop you like so much. Whether that will continue to be
possible in the future is uncertain although indications are that Gnome
3 will be available as an option. What you should realize though is that
Gnome 3 itself looks very different as well. You could download a Fedora
15 live image to take a peek at it.

Time does not stand still and eventually you will have to move to a new
desktop whether you stick with Ubuntu or not. From what I see from my
father, my wife and kids, Unity didn't make much difference to them. I'm
sure you can adapt Unity in the future to a desktop you really like as
well.
