Jungle Disk seems to be security conscious. From their site, "Jungle
Disk encrypts user data with AES-256 encryption. ... The master key is
based on a password YOU choose, known only to you and not stored with
Jungle Disk."

You can apparently choose between Rackspace Cloud or Amazon S3 to host
your files using Jungle Disk's service. I suppose you could also use
something like Truecrypt to encrypt information you store on offsite
hosted servers of your choice. I would be sure to maintain local backups
no mater what I chose.
