In Ubuntu 11.10 Unity is based on Gnome3. They just replace mutter and
Gnome Shell with Compiz and Unity.

To use Gnome Shell you just have to install it.

You can always choose whatever desktop environment you want in
Ubuntu. It may just not be installed by default.
