From your apt-cache show, it's the highest available version. So here
it's:

> Version: 3.1.10+build1+nobinonly-0ubuntu0.11.04.2

Were other versions available you can specify a lower version than the
highest with an equals sign:

apt-get install thunderbird=3.1.10+build1+nobinonly-0ubuntu0.11.04.2
