I broke unity with gnome3 ppa, now what?

You could perhaps use ppa-purge to get rid of the gnome3 ppa and
packages and then issue:-

sudo apt-get update
sudo apt-get install ubuntu-desktop^

Which may or may not reset you back to standard.
