Which is the best choice, pae or x64?

No, there's no need. But if you have the option of VT, you might as
well leave it on permanently.

Depends on the hypervisor you choose. I believe VirtualBox does not
/need/ it but will use it if it is there.

It is an option; you can turn if off. I don't know for sure if it is
on by default, as I do not have VT on any of my machines to try it
out.

I recommend the full edition, not the limited "Open Source Edition"
(VirtualBox OSE). It is a free download from here:
http://www.virtualbox.org/

It's very easy to install. It will not update automatically, but every
time you run it, it checks to see if there's a newer version & tells
you if there is.

I have not tried VMware Workstation in many years, as it is a paid-for
piece of software & I prefer to use free tools. Some people prefer it.
I am perfectly happy with VirtualBox myself.

I have played with VMware Player and VMware Server. Both are pretty good tools.
