I think you are confusing Theme with Background. Have another look at
System > Preferences > Appearance. Click on Theme and you will see a
set of available themes that set up the colours for menus, borders,
etc. Note which one is currently highlighted so that you can get back
to it. Click on one of the others and it will immediately change your
setup to that one so you can see what it looks like. In addition to
the ones there, more can be downloaded online. Google will find many
more also I suspect.
