ubuntu-server and remote X displays

OK, to answer my own question, a buddy has an ubuntu server so I did a
fake install of firefox

apt-get -s install firefox

and it spat back everything that would be installed with that -
basically all of gnome/X and a crapload of other stuff.  I guess it
assumes it will be displayed locally or something.

In any case, given this, is there any reason to use ubuntu server
versus ubuntu desktop on this box?  Since I'll be remote displaying
everything back to my desktop?  This will be completely headless so
I'm thinking it would still be best to just use ubuntu server and let
it install all that stuff.
