Kernel compilation

Hi,

I have a couple of question about kernel compilation.

I patched the stock ubuntu kernel to fix a problem. I followed the 
instructions from this page, where I did choose method #2 (the apt-get 
source method):

So far everything went well, and I obtained a deb file for my patched 
kernel. When I installed this package, the update manager always wants 
to replace my custom kernel with the ubuntu one. How can I prevent this 
from happening? Is there a way I can change the name of the package, so 
it includes some description, so that I can easily recognize my custom 
kernel, and the update manager doesn't want to replace it.

How can I rebuild the kernel when ubuntu releases an updated version? I 
patched 2.6.31-16, but there is already a 2.6.31-20 kernel available. I 
can go through the entire procedure again, but that takes a lot of time 
and disk space to do a full rebuild every time. Is there a way to update 
my current build tree, so that only changed files have to be rebuild?
