As Robert said, alot of stuff works directly out of the box; you can do it via 
the server CD, or tweak a desktop install - doesn't matter which, really. 
Tweaking out a desktop is helpful when you want to have a workstation/server 
setup - but hey, it's six of one, half dozen of another.

Fileserver is extrememly simple - and I believe wholeheartedly in the K.I.S.S. 
principle. The default Samba smb.conf is brilliant and literally requires just 
a slight edit here and there, and WHAM it's a working and extremely fast file 
and print server.

Mail - well, that's dependent on your needs. Default setups are 
Postfix/Courier - I've also used Dovecot for simple IMAP storage (where the 
client machines can access imap email boxes for themselves and also share a 
public imap folder - kinda like Exchnage). Depending on the actual needs, all 
of this can literally be a brainless setup - and in some ways - to some folks, 
doing alot of editing of config can be daunting - but it's a matter of 
perspective, innit? I prefer this because once it's done, well, it's done and 
that's that - it just works.

On that same token, I've also gone so far as to setup a plain-jane server and 
run Windows Server/Exchange Server in a VM (with VirtualBox or VMWare) - just 
gets trickier cuz you still have 40 times the crap to deal with - it's just 
living in a virtual environment.
