Yes. First you must enable editing of shortcut keys. From the main menu
go System->Preferences->Appearance->Interface and check the box beside
"Editable menu shortcut keys". Next, open a compose window and mouse over
File->Send and hit Delete. If you want to assign it to another shortcut,
keep it moused over and enter your key combination.
You can also edit the file ~/.gnome2/accels/evolution to change the menu
shortcuts.
