Definetly MPD + GMPC, but that's a bit hard to configure (
http://www.webupd8.org/2009/11/gnome-music-player-client-gmpc-mpd-just.html)

But from the standard music players, I have to say Rhythmbox and
Gmusicbrowser, for their stability and usability! By far :)
