Grub2 and a custom environment variable

Does anyone know how to add a custom environment variable to 
/etc/default/grub and have it be usable in the grub.d scripts.

I would like to define a GRUB_MAX_KERNEL variable to use in 10_linux, 
but simply adding it to /etc/default/grub doesn't quite cut it.
