Your "modem router" setup should not make any difference for email. If you are having trouble, please be more specific about what you mean by "modem router" and what problem you are having, someone may be able to help. You could try running Ubuntu from the live CD without installing and see if it can use your setup to connect to the Internet automatically, if it does, then all is well.
There are several ways of collecting email using ubuntu. Outlook is an email "client" for Windows. In Ubuntu, the most popular clients are Evolution and Thunderbird. Either one can be made to work as long as you have a connection to the internet.
