My experience with USB <> Parallel cables themselves is rather mixed.
They seem quite happy with one printer and not another. Most common
problem is the computer doesn’t think the printer is there, unplugging
the cable and plugging in again often clears the problem but, not really
practical.
I would look at the Netgear PS 101 Parallel server. I’ve seen several
around on old impact printers and everything worked OK.
