You can add English/Spanish and Spanish/English dictionaries to
stardict. They aren't very complex, though fairly complete. I've also
had success running the Oxford cds under Wine.
A good dictionary is going to cost. The open source alternatives are
useful, but very, very lightweight, ime. For example, they might know
the masculine forms, but not the feminine (pequeño/pequeña, eso/esa),
and verb forms will probably be absent.
That said, google translate is pretty good.
If you use an english keyboard and want to add the essential áéíóúñ
characters, then the simplest way I found (via help from this list) was
to use xkbcomp
