Open up Synaptic Package Manager from Applications->System and do a full
search for 'icon-theme', pick which one you're interested in and choose
install.

There should be a way to pick which icon-theme you wish to use
for whichever window manager you are using, usually called 'appearance'
or 'desktop settings' or something similar.
