You might wish to do:

Email >> Options >> Email Settings
Use Auto Signature:    No

This will take care of the annoying T-Mobile ad in your signature.

Now, for taking care of the top/bottom posting I'd recommend using the
gmail client for blackberry.  It's way better than the native built-in
mail application on the bberry, and has the added benefit of keeping
your gmail separate from work mail, if you use your device for work.
