This really should have been asked in a separate message...  Anyway to
answer your question, you are most likely clicking on the 'reply to all'
button and not the 'reply' button.  The 'reply to all' would exhibit
this behavior, i.e. sending an email to the email address of the person
who wrote the message, and another to the mailing list using the
reply-to field.  It would also do something similar in a newsgroup.

If you don't have a button that simply says reply, then you'll need to
edit your menu bar.  Just right click on any menu button and choose
customize.  There you'll find other menu buttons that you can drag and
drop onto the menubar.
