Here is the default list (system wide) for file association

/etc/gnome/defaults.list

and your local changes I believe can be set in this file.  Look for your
entries here.

~/.local/share/applications/mimeapps.list

If you prefer a GUI interface then right-click on the file in question,
choose properties, then click the "open with" tab.  This should give you
an option to remove applications from the list as well.

Also, have you given consideration to "unrar" or "unrar-free" to open
the archives without having to use wine?
