sudo aptitude install ubuntu-desktop #if you want gnome
sudo aptitude install kubuntu-desktop # if you want KDE
sudo aptitude install xubuntu-desktop # for xfce
sudo aptitude install lxde openbox # if you want lxde openbox
sudo aptitude install ion3 # if you want the best wm
(okay, ion3 is my fave & default anyway)
sudo aptitude install icewm # for icewm
sudo aptitude install jwm  # for joe's wm
sudo aptitude install dwm dwm-tools  # for dwm
sudo aptitude install xmonad  # for xmonad
sudo aptitude install fluxbox

etc., etc.

You have many options.
If you're totally new, ubuntu-desktop would be the default gnome 
desktop, and recommended, probably, or the kubuntu-desktop.
Those will easiest for the newest of n00bs.
