If your system tries to automatically mount a share which isn't 
reachable, you can't skip it during the boot process. However after you 
login you can disable that share. I'm not sure how to do it with a GUI 
but you could edit the fstab file with the command

gksu gedit /etc/fstab

in a terminal. Then put a "#" character at the beginning of the line 
which is responsible for mounting the share or remove that line. And be 
careful not to change any other line of the file. Maybe you want to read

And for the Grub problem I would suggest you reinstall the grub package 
using your favourite package manager.
