froller at metis:~$ pdf
pdf2dsc    pdftoabw   pdftoppm   pdftotext  
pdf2ps     pdftohtml  pdftops 

These come stock with install I believe.  For example from a terminal
type:

pdftotext sourcefile.pdf destinationfile.txt

This will net you a text file of the pdf.  Experiment and see which best
fits your needs.
