I use claws-mail with the dillo-viewer plugin to view to see html coded
emails or attachments.  I believe that everything else is saved non-html
format by default (though I could be wrong).

The Ubuntu repositories do not show the latest version of claws-mail so
add these lines to your /etc/apt/sources.list file as root:

## Claws-Mail repositories
deb http://ppa.launchpad.net/claws-mail/ppa/ubuntu jaunty main
deb-src http://ppa.launchpad.net/claws-mail/ppa/ubuntu jaunty main

then save this as claws-mail.asc in your /home/user/ directory and
install on the command line:

sudo apt-key add /home/(user)/claws-mail.asc

or in Synaptic by going to Settings -> Repositories -> Authentication
-> Import Key File.  Open claws-mail.asc

If you are not using Jaunty, the authorisation key may be different.
You can get the right key and sources.list lines for your version from:
https://launchpad.net/~claws-mail/+archive/ppa

However if you just want to save HTML as text, try html2text, which you
can find in the repositories
