Installed but no username/password

I'm not quite shure what you mean, did you install Ubuntu in a VM or
did you install VMware on a Mac running Ubuntu?  Must be the former
since the latter is impossible w/o username/password.

I suspect you booted a Live CD in a VM. Just start the VM again
with the Live CD in your drive (preferrably mount an ISO image).
When its up, select Install Ubuntu.  During this process you will
be asked for username/password and upon completion you have a
working Ubuntu on your virtual disk.
