Postfix can only *send* mail.  Setting up an email server is a very big
thing, that is hardly useful if you do not have fixed IP addresses with
pointers.  I think a better option for you right now, is to open a new
IMAP account with either Google or some one else.  When you have both
accounts working, you can just copy and paste (drag) the emails from the
one account to the other using your GUI email client.  I know for certain
that the dragging method works in Thunderbird, so you might want to
install and use TB in case Evolution fails to do this properly.

PS:  There is more chance that you win the top price in the national
lottery, than You having virus/spyware issues in Linux/UNIX etc.
