You should be able to copy

/home/[user]/.evolution

directory, where [user] is your user name.  How you recover the email
into evolution once you have it can prob. be googled or I believe there
is a thread that already answers this in the archive.

In the future I recommend:

In evolution
File->Backup Settings...
