The only way that I know is to edit the file /etc/X11/xorg.conf. There
is a section in there for video driver and you can set it to vesa. I am
not sure how to do this with a gui.

I am not sure what is happening but if you launch evolution from the
terminal all error messages should end up in the terminal and you will
have a better idea what the problem is.
