Startupmanger (read the differences between it's options in grub and
grub2 - karmic uses grub2 by default with new installs) will allow you
to select the 'Default operating system'. After install;
System|Administration|Startup Manager|Default operating system|click the
dropdown & select XP. WinXP will not moved to the top of the grub menu,
but instead the WinXP will be the first & immediately selected item by
default.
