While not Ubuntu-specific, this one has helped me with Linux more than
any other:
Linux: Rute User's Tutorial and Exposition, an online book
Linux: Rute User's Tutorial and Exposition is a book written by Paul
Sheer and published by Prentice Hall.  It covers the use of GNU/Linux
for a novice to intermediate user.  System administration is covered
as well.

Get it with your package manager or by:
>sudo apt-get install rutebook>

Read it in your browser.
