can partitioning be restructured or must I start over

I think you can combine those unallocated spaces. You would have to resize 
the extended partition to the end of the disk. But you can't do it with 
the / partition inside the extended partition mounted. I would suggest 
you boot from a Ubuntu LiveCD and use gparted from the CD without 
mounting anything. And don't forget to do a backup before you play with 
your partitioning.
