not seeing Openoffice.org 3 in my Office or Graphics menu

Since it was installed manually, you have to also add the item on the
menu manually. If it was installed as deb, a .desktop file would be
placed on /usr/share/app-install/desktop and would be added to your menu
automatically.

You can edit the menu using Alacarte
