The less software you ship, the fewer updates you tend to need to ship, yes.
So if I build a box based on debian-core, and build everything else, I 
don't get many updates. Or, rather, I don't get informed of as many 
updates. They're still there, I just need to chase them down from the 
individual developers.

At some point, someone has to 'F with it' in order to make it. There's a 
similarly good likelihood of it breaking during initial production as 
during modification for distribution.
