Running cron under sudo

Nope
  sudo su -
will log you in as root after you provide YOUR password.

Then crontab -e will work as expected.

The files end up in /var/spool/cron/crontabs incidentally.

You might want to consider using /etc/crontab rather than 'root's own crontab
