Gibberish in Ubuntu when dealing with documents / websites

I can tell you that Traditional Chinese versions of Windows use BIG5 
encoding and Simplified Chinese versions of Windows use yet another 
encoding, GB2312.

I dont know what you are doing on the documents side but the problem 
with websites is that sometimes the encoding used is not set on the 
pages and so they show up as gibberish. Otherwise, Firefox would display 
the stuff properly.
