Likely your largest 'restriction' will be the GPL license, which states
you need to make available the source code available for the software
you are distributing by request at a "reasonable distribution fee."

This is more of a technicality, since the Ubuntu sources are already
widely available.  However, to cover all your bases, it wouldn't hurt to
download all the source packages for the Ubuntu version you are
distributing, and putting up a document on the desktop that your clients
can request the whole lot of them on DVD's for $5.
